Dimly lit, with stained-glass windows setting the early evening scene, Proof Bar has a romantic atmosphere that's elevated by the jazzy music and slim, cosy layout.
Proof has established itself as one of Adelaide's more refined drinking holes. And, in fact, you can choose from two spots to drink at when you visit: a bar downstairs, and another upstairs with booths and terrace seating
The terrace, located between the red brick and render of the taller surrounding buildings, is strung with climbing plants and fairy lights. It's likely that many pleasant hours will be spent here, sending friends in one-by-one for the next bottle of thoughtfully selected wine.
As the sister establishment of Melt and Press, Proof neighbours the latter, and offers food from its incredible menu as well as gourmet toasties onsite. Unlike many places, the hardest working employee isn't the sandwich press, despite it regularly getting around seriously gourmet ingredients. The bartenders are attentive and informed, and if you're looking to try something new, they'll ask the right questions and pour you something exactly to your taste.
The crowd fluctuates between troops of dolled-up birthday guests, corporate catch-ups, and casually dressed locals who know where to find a good drop. The space is sophisticated enough to accommodate them all and compete among Adelaide's finest bars.
