Experimental Ice Creamery Giapo Has Closed Its Doors

After nine years reinventing the humble dessert, haute ice cream parlour Giapo has closed the doors of its Queen Street store. Owner, and the man they call 'ice cream wizard', Gianpaolo Grazioli, revealed on the company's Facebook page that the closure is due to a lack of space to design, trial and develop new ideas— a process that has previously been tackled in his home kitchen.

"The development of any new idea often saw us coming back and forward from my home to the store on Queen Street many times until we were satisfied with the creation. The development of an idea could take up to 1 year."

While it's the end of an era for the thriving Queen Street store, it's not an absolute goodbye. Breathe easy, you'll still have the opportunity to try a selfie cone or the triumph made with gold dust. As the ice cream wizard lays it out, he was "born to change the way ice cream was being experienced". Giapo will open a bigger and better space on Gore Street in the not too distant future.

"As we continue to learn and explore what it means to expand the definition of ice cream, I trust the new bigger site will put us in the condition to do that. A place where we can have an R&D kitchen right above the service kitchen is all we have ever wished for."

As well as a boost in creativity and innovation, Gianpaolo states that the new space will welcome a new menu and will continue to be the most different ice cream experience in the world.
