If there's one thing you can expect from Peach's Hot Chicken, it's a true southern American experience (and sweat-inducing poultry).

Inspiration for the business came from co-owner Alex George's upbringing in Woodbury, Tennessee — in particular, Nashville's hot chicken shacks. After meeting his New Zealand-born girlfriend (now wife) Olivia at a five star golf resort in Colorado, the pair worked on developing the idea of a roaming chicken truck. Since arriving back in Auckland and securing a caravan the pair have been hawking their authentic Nashville hot chicken between music festivals, Smales Farm and Silo Park.

Practically every recipe found on the food truck's menu has been passed down in Alex's family. The headlining buttermilk southern fried chicken comes from Alex's grandmother, Mama Jean. It's served in varying degrees of heat; from mild to medium and what they call "a religious experience".

Take your pick from three wings coated in your preferred spice level and served with Mama Jean's bread and butter pickles on a piece of white bread that is there to soak up some of that heat.

The chicken sandwich is served on a brioche bun with homemade aioli and pickles, while the chicken waffle hits all the sweet, savoury and spicy notes. The thick Belgium waffle comes topped with fried chicken, chilli infused pure Canadian maple syrup and whipped garlic herb butter.

Lift your dining experience further with the pimiento mac 'n' cheese and the cheesy hashbrown bake, which is a well-kept recipe of Alex's mother. They also offer fresh brewed sweet iced tea with different flavour variations.

Peach's Hot Chicken can be found at variation locations and markets around Auckland. Sniff them out over here.
