Tucked away among the George Street construction chaos and down De Mestre Place, with only a single 'B' hanging outside to hint at its location, Burrow Bar is hard to spot. So you could be forgiven for not having visited yet. So, what would you find if you did? Burrow Bar is the brainchild of four friends with a hefty dose of hospitality experience between them. The team has done well to create a space that is refined but low-key, considering that bar is located in a former office space in the CBD. The cocktail menu is switched up regularly, utilising boutique spirits, seasonal ingredients and house-made liqueurs. Light bar snacks are available if the drinks spur on a hunger, with both the chicken liver parfait and the reuben sandwich getting a good rap. At the moment, the bar's appearance sits firmly in the 'rustic charm' category: sandstone walls, exposed timber ceilings and an eclectic mix of furniture. A refurbishment is scheduled soon, spurring on the 'next era of Burrow Bar'.
