Scout Sydney

The world-famous London cocktail bar has opened above Surry Hills' The Dolphin.

Opened in early 2017, London cocktail bar Scout quickly made the World's 50 Best Bars list. It stands out for two main reasons: every ingredient in every cocktail comes from the British Isles and every leftover ingredient (every straggling bit of garnish) goes into the food. To put that in more trendy terms, Scout is hyperlocal and closed-loop.

Now, Scout founder Matt Whiley has arrived Down Under. More specifically, he's set up a Sydney outpost of Scout in a disused section of the Dolphin's top floor. And it has many similarities to the original.

Which means you can now drink highly unusual cocktails, made with native ingredients and local flavours, in a space that's part science laboratory, part bar. In the purpose-built 'lab', which Whiley hopes will become a training ground for Australian bartenders, the Scout Sydney team is whipping up an ever-changing Aussie-focused drinks list.

You'll find new takes on trusty classics, such as a vodka soda ($22) made with strawberry gum and PS40 green ant soda and an espresso martini ($22) with clarified banana and coffee from nearby cafe and roaster Artificer. And that's just the tip of the distilled and infused ice cube — the drinks get even more left-of-centre.

Wine cocktails feature the likes of roasted banana ferment, green olive and wattle seed vodka, and there's an Avo Toast ($22) cocktail. Yep, millennials' favourite brunch item is now available as a drink. It's made with butter vodka from Tasmania's 666 distillery, a prosecco and brioche distillate and avocado (of course).

Scout Sydney is also serving snacks, with Monty Koludrovic cooking up a range inspired by Whiley's beverages. Like the cocktails, the food menu changes frequently, but expect to find dished like 'nduja and egg yolk topped toasts ($11), padron peppers with kombu and lime ($12) and salmon atop garlic lavosh ($14).

Although Scout shares a space with the Dolphin, the two operate as independent businesses, with separate entries and aesthetics — and their aesthetics are almost polar opposite. While the Dolphin is light and bright, with lots of white and Keith Haring-like art, Scout is dark and minimalist. Walk through a nondescript black door on the pub's second floor, and up a set of stairs, and you'll find the bar decked out in emerald green banquettes, chartreuse stools and giant fiddle leaf figs.
