UPDATE, MARCH 20, 2018: Hughes Barbecue announced via its Instagram that it will be moving. This will be the pop-up barbecue joint's last week at the George Hotel with the final day being Sunday, March 25. It has not yet announced where or when it will be reopening — so we suggest heading in to get your smoked meat fix this week.

Smelly neighbours can be a nuisance. But this isn't the case for the locals of Waterloo, where the neighbour is Hughes and the aromas are phenomenal. They're courtesy of two smokers turning out charred meat and veg six days a week in the beer garden of the George Hotel.

Anton Hughes has parted ways with Bovine & Swine, but is putting the metaphorical chops he earned there — and at Vic's Meat Market — to good use. As pit boss, Hughes fires up the grills early, smoking a selection of quality cuts that will have you salivating. Each protein has a different spin; brisket is smoked for 12 hours with a salt and pepper rub; chicken wings have an Old Bay seasoning; and lamb rump is marinated with thyme and rosemary. Meanwhile, pork ribs are treated to a root beer glaze and for vegetarians, there's pulled jackfruit on offer.

You'll also find daily specials, hand-written on brown paper, that include adventurous items like crocodile. The meats are plated up with either a selection of traditional American sides — think steak cut chips, mac 'n' cheese and potato salad — or in a milk bun with house-made slaw. Bring on the food coma.
