Before the Sparkke Change Beverage Co made itself at home on Morphett Street and dusted the cobwebs off of the 180-year-old Whitmore Hotel, it made its ethos known with a range of craft beers. On each can: a slogan gunning for social change, with phrases like 'consent can't come after you do' and 'nipples are nipples'.
Now, Sparkke at the Whitmore serves these beers on tap, along with expertly mixed cocktails and raveable restaurant fare. The light-filled interior showcases a micro-brewery, with the modern renovation allowing hints of historic charm to remain.
In the kitchen, you'll find fresh produce and passionate cooks, playing on pub favourites and pumping out show-stoppers like the mushroom and chestnut dumplings in chicken bone broth ($16), and woodfired cauliflower on a palak paneer ($22). For dessert? The burnt marmalade soufflé ($16) will make you swear at the dinner table.
Proudly Australia's first pink-floored brewery and led by a team of women, this establishment paves the way for a new, more inclusive approach to beer and pub culture.
