Social enterprise Cook's Night Off will attempt to build the world's largest lamington this month. The buy one, give one organisation, which offers ready-to-eat meals to Kiwis in need, will need to create a whopping 2500-kilogram slab of coconut sponge to beat the current feat and claim the official Guinness World Record.
The chocolate behemoth will land at Sylvia Park Shopping Centre on Tuesday, 21 July from 7.30am. The massive cake will be equivalent to 50,000 individual lamingtons and will require over 500 kilograms of flour, 650 kilograms of sugar and 13,000 eggs.
The current world record is held by Australian bakery Quality Desserts and the Toowoomba Chamber of Commerce for its massive 2361-kilogram lamington. Cook's Night Off is aiming to beat the record by 150 kilograms.
While the cake will be baked off-site in large slabs by wholesale bakery, Creative Edge Food Co, the outside lamington will be created layer by layer, with chocolate sauce and coconut added to each layer.
Once the lamington has been completed and officially weighed, the public are invited to eat as much as they like for a gold coin donation (BYO cup of tea). Proceeds from the event will go towards giving meals to the Cook's Night Off meal partners. The remaining lamington will be packed and donated to the Auckland City Mission for distribution through their emergency food program.
