Yeshe Dawa's Freedom Loaf is something of a legend in the Auckland brunching scene. What started as a side project to create an alternative to wheat based bread for gluten and dairy dietary requirements, can now be found at practically every first-rate eatery in the city, and beyond.

Often found hawking the loaf at farmer's markets, Yeshe now has her very own toast headquarters at 218 Dominion Road, Mt Eden; an establishment where you can buy the nutrient dense Freedom Loaf nearly any day of the week and enjoy a selection of mouth-watering toppings and accompanying beverages.

In true Midnight Baker fashion, the toast café boasts a menu free of gluten, wheat, dairy. It's also 95% vegan and refined sugar free. There are four toast varieties - natural, herb, cinnamon chai and buckwheat - while toppings are broken up into sweet and savoury. High points on paper include: roasted spiced pear with date caramel, Whoatella, coconut-almond-crunch, and vanilla bean Nice Cream; basil pesto with vine tomatoes, crumbled cashew cheese and hazelnut dukkah; balsamic and thyme mushrooms on cannellini bean mash with parsley puree.

The café is also well set in the beverage department, offering coffee from eighthirty, teas from Forage and Bloom, Maori wellness tonics from Aotea, and Organic Mechanic's ginger infused kombucha.

The Midnight Baker can be found at 218 Dominion Road, Mt Eden. It's open from 7.30am - 3pm, Tues - Fri and 8am - 3pm, weekends.
