A kickass fish and chippery is the first part of St Kilda's new-look Stokehouse to open for business. Starting service at 4pm today — Friday, October 21 — right off the St Kilda Beach boardwalk, Paper Fish kiosk will offer sustainable, healthy(ish) eat-in and takeaway options all throughout summer.

Open noon until late seven days a week, now until the end of daylight savings, Paper Fish will serve up "sustainable seafood and fresh quality produce" in "environmentally friendly packaging". Menu items include flathead, blue grenadier, salmon or gummy served grilled or tempura fried, as well as fritto misto (small fried bits of seafood), sweet potato cakes and crinkle-cut chips in a cone.

Customers will also be able to quench their summer thirst with beer, canned wine and icy granitas, including a number of 'grown up' varieties. The kiosk itself can seat 70 diners, but getting take away to eat your fish and chips on the beach is a given. They'll also be introducing online ordering next year.

The kiosk opens ahead of the full Stokehouse re-launch. The iconic venue burnt down in 2014, but is set to reopen on December 6. It will also be home to Pontoon, a ground floor bar and eatery set to open at the end of this month, serving grilled seafood, share plates, and frozen rose – aka 'frose' – on tap.

Find Paper Fish in the Stokehouse Precinct at 30 Jacka Boulevard, St Kilda. For more information follow them on Instagram or visit paperfish.com.au.
