A trip to the Central Coast usually means hanging by the beach. Until now, this hinterland destination has been all about its bushland restaurant, The Homestead — named one of the most beautiful in the world — and its elevated bakehouse serving sausage rolls to macarons.
However, now closing in on a decade of pastoral dining, Saddles Mount White has revealed its next chapter — The Grand Saddles Lodge. Conceived by owner John Singleton — also known for reinventing Bondi's famed Icebergs in the 90s — the estate will soon feature an intimate retreat bringing together 20 private villas, more fine dining, an elegant piano bar and a restorative day spa.
Set for a spring opening, the accommodation will move into a picture-perfect spot opposite the restaurant, bringing guests a new sense of quiet luxury while keeping them in touch with the surrounding landscape. Designed by Michelle Leslie and White + Dickson Architects, a winding driveway flanked by native bushland leads to the stay's glass-domed entrance. Stepping inside, expect sandstone, spotted gum and warm brass details alongside locally crafted furnishings.
Privately tucked away amid the trees, but just an hour from Sydney, The Lodge's villas showcase the work of nearby Central Coast artisans, with each villa featuring separate living spaces, an open fireplace, a private terrace and a plunge pool. Meanwhile, a communal infinity pool and pool bar overlook the agrarian landscape, made even more relaxing thanks to native birdsongs emanating from the branches above.
Yet there's more to The Grand Saddles Lodge than simply blissing out. Inside the main building, a new restaurant will showcase the best of Australian produce, drawing inspiration from the surrounding native food pantry and making the most of on-site herb and vegetable gardens. Think fresh local seafood, premium organic beef and poultry, complemented by a top-notch selection of local and international wines.
Once an elegant meal is complete, carry on the conversation at Ned's — Saddle's forthcoming art deco-inspired piano bar. Naturally, the space is anchored by a grand piano, with live performers set to tickle the ivories on the regular. At the same time, trust the bar will serve up a perfectly balanced martini — or your nightcap of choice — alongside a refined selection of smaller plates that ensure your evening unfolds at the ideal rhythm.
Besides dining and drinking amid the scenic countryside, The Spa at The Grand Saddles Lodge will certainly become a luxe destination for a restorative experience. On the agenda are five treatment rooms, traditional and infrared saunas and ice baths, plus curated treatments inspired by native Australian botanicals.
Of course, the boundless fresh air can deliver immense soothing rejuvenation, too. During your stay at The Lodge, guests are invited to wander the walking trails tracing bushland contours, leading to nearby oyster farms and the Hawkesbury estuary. And as part of the five-star service, The Grand Saddles Lodge team can tailor individual itineraries, so you spend more of your time getting amongst the Eucalyptus-scented wilderness or focused on life's serenity-inducing luxuries.
