Cocktail of the Weekend: The William Massey

A cocktail that combines the best of Wellington and Limavady in late August/early September.

Hawthorn's top bartender Peter Lowry was inspired by New Zealand's 19th Prime Minister, the Irish-born William Massey for his award-winning cocktail. The cocktail combines the best of Wellington and Limavady in late August/early September.

The Irish summer is represented by the deliciously smooth Jameson Whiskey, playing on its summer flavours with citrus and floral notes in their cocktail. The New Zealand winter is represented by the toddy-style drink with hints of spice, again inspired by Jameson Irish Whiskey.

It helps that Irish summers are generally cold enough for toddys to be enjoyed annually.

Ingredients

45ml Jameson Irish Whiskey
30ml Freshly squeezed lemon juice
20ml of spiced sugar syrup*
A 1 inch block of Saffron and Rose Jelly **
110ml Boiling water

Method

1. Build all ingredients, apart from the jelly, in either a stemmed or Irish Coffee glass.
2. Tong a cube of Jelly into the base of the glass and garnish with fresh Jasmine.

*If unavailable you can substitute 2:1 brown sugar syrup and angostura Bitters, although you will lose a little of the hint of caramel.
** Also a homemade ingredient but you can use rose jam with a tiny pinch of Saffron.
