When John Demetrios won Dessert Masters in 2024, he put his $100,000 prize towards Butter Days, the Malvern bakery that has since built a cult following for its Sunshine Buns. One year on, the pastry chef is preparing to open Lennox Street Local, a sibling bakery and cafe that will bring some of Butter Days' greatest hits north of the river to Richmond at the end of October. Rather than clone the Malvern shop, Demetrios is giving the new venue a look of its own. It takes over a former laundromat in a heritage building, now fitted out in black and grey with pops of burgundy and yellow, plus cement floors and timber details — a moodier contrast to Butter Days' chirpy white and yellow. "Instead of trying to copy and paste what we've built there, we decided to create something new, but the pastries will still be our main focus," says Demetrios. The headliner among the new seasonal bakes is the croissant jaffle, starting with a cacio e pepe-inspired version filled with Pecorino Romano and cracked black pepper and finished with plenty of grated cheese. Rotating flavours like pulled wagyu with jalapeno cream, spicy kimchi with whipped ricotta and truffle Vegemite (when the season permits) will follow. With an eye on the lunch crowd, the menu will also run to classic jaffles made with house-baked sourdough. Cakes by the slice, in rotating flavours such as strawberries and cream, will come later. Once it opens, order through the coffee window out front or grab one of the 20-plus seats inside.
