The Pullman Adelaide sits on Hindmarsh Square, close enough to Adelaide Oval, the Convention Centre and the Lot 14 innovation precinct that most of the CBD's main draws are a walk rather than a drive. The building — 15 storeys, 308 rooms and suites, a $150-million build — came from Adelaide firm PACT architects, which acted as architect, head consultant and interior designer. The firm took the garden square outside the front door as its brief and ran that greenery inward through the lobby and lounges. It opened in 2010 as a Crowne Plaza and switched to Accor's Pullman banner in 2017. The Pullman name traces back to 1859 and now spans more than 150 hotels across 40-odd countries, all built on the idea that a hotel should be a place to create and connect, rather than just sleep — hence the lobby co-working and the brand's roving xChange event series. Rooms run from Superior through Deluxe and Executive to Junior and Deluxe suites, with accessible rooms across the categories, and the wi-fi is quick enough to survive your morning Stand-up meeting. Level two holds a lap pool with a spa and sauna, plus the Fit Lounge gym and its bank of Peloton bikes. Parking is on site, and the hotel is closely ringed by parkland. PARC Brasserie & Bar took over the ground floor in May 2024, replacing the hotel's long-running Salt, and it runs like a separate address rather than a hotel dining room — its own street entrance, windows onto the square, service from midday until late, seven days. Executive chef Francis Luzinier applies European technique to South Australian produce and portions it across four smaller courses rather than two large ones, on the theory that you should finish a meal curious rather than defeated. PARC Bar & Lounge runs alongside it all day, and the drinks list is a meticulous labour of love; restaurant and bar manager Clement Demarais has split the wine roughly 50/50 between Australian and European bottles — with Coffin Bay, the Adelaide Hills, McLaren Vale and the Barossa doing the local work — and stacked the back bar with gin and whisky. Breakfast is à la carte, or you can get an Early Bird box if you have a 7am flight. If you're booking the hotel for an event rather than a stay, the top-level ballroom is worth knowing about. Reworked by Woods Bagot in a $1-million refurbishment completed in early 2020, it has a glazed facade, bi-fold doors on the pre-function space and a refitted bar that opens onto a balcony above Hindmarsh Square — the city on one side, the Adelaide Hills on the other.
