Sonoma's Rose Bay flagship store has undergone a thoughtful refurbishment, making the beloved bakery even lighter, brighter, and more enticing to stay for just one more flaky pastry. The artisanal bakery, part of many Sydneysiders' daily routine for more than 15 years, may have been refreshed, but at its core it still holds a deep love for the craft of baking. The distinctive black exterior facade has been replaced with a new signature colour: Bellata Crumb. The warm neutral colour, inspired by the brand's baking heritage and the natural colours of flour, grain and crusts, has given the iconic corner landmark a fresh new look. "Rose Bay has always been an important Sonoma store, and our intention was to take everything people already value about Sonoma and make the experience warmer, more generous and more connected to the bakery itself. People increasingly want places that genuinely belong to a neighbourhood. Somewhere they know, trust and return to as part of everyday life. That's something Sonoma has always believed in," says founder Andrew Connole. Not only has the exterior been updated, but the kitchen has also been upgraded with two MIWE ovens, meaning the pastries and loaves can be baked on site daily. Those loaves include a particular spotlight on the Bellata Loaf range, named for the small NSW town where Connole first developed his interest in baking.
