Pork crackling is one of the great pleasures of life for meat-eaters, and Mr Crackles on Bourke Street knows this. A famed Sydney late-night haunt, Mr Crackles opened this Melbourne outpost in 2018.

It churns out all manner of rolls and bowls featuring the good crispy stuff — which makes it the perfect stop off after a big night out. Diners can choose from roast pork rolls, hot dogs, and crackling. This sounds simple but each option has been reworked with a fresh modern twist.

The pork belly used takes three days to prepare with just the right amount of salts and spices. Many of the rolls are tempered with fresh Vietnamese-styled salads featuring pickled carrot and cucumber. It provides an amazing counterbalance to the slow-braised meats that are melt-in-your-mouth good.
