Melbourne's 24-hour ramen hot-spot Shujinko has added to the family, opening the doors to its fourth CBD location on St Collins Lane. Debuting the Shujinko Express concept, the new store is set to be a firm favourite with hungry city workers. It's dishing up yet more of that authentically executed Tokyo-style tonkotsu ramen.

The timber-clad space has room for 34, with an extra 320 seats in the adjoining food hall. Shujinko has made a name for its flavour-packed 12-hour boiled broth, chargrilled char siu and handmade noodles, and you'll find many of the same smash-hit dishes at St Collins Lane.

The signature Shujinko ramen boasts a traditional pork broth base, loaded with veggies, marinated egg and grilled pork belly ($13.80), while the black ramen features an extra hit of spicy seasoning and a special black seafood flavouring ($14.80).

There's also a vegetable ramen ($13.80), a fiery karakuchi version ($14.80) and a range of rice bowls, including a boneless chicken karaage don ($10.90). Meanwhile, the sides offering features classics like handmade gyoza ($7.90) and takoyaki octopus balls ($9.70), which you can match with a crisp Asahi beer ($9) or bottle of sake.
