On your next trip down Collins Street, be sure to look out for an unassuming little pod of delight. Sensory Lab has opened a new store in Melbourne, and the space-age cafe has garnered numerous accolades for its curious and artistic aesthetic. Wanting to create a "calm space away from the hustle of Melbourne's CBD", winner of the inaugural Australia Tea Brewer's Cup, Ayden Graham, has styled a haven for coffee and tea, as served alongside unique tartines and quality spreads.

What makes this outer-city caffeine hit particularly special is the space itself, featuring innovative design by Foolscap Studios. The cafe is a Swedish-Japanese fusion, combining calmingly minimalist design with spacey vibes for a machine-like feel. Basically, Sensory Lab has effectively created an ultra-modern yet peaceful hub for coffee-breakers and tea appreciators and across the city, and beyond.

Items on the menu include vegan and gluten-free hazelnut cacao butter — and, for the less calorie-conscious, there is a range of nan-and-pop homemade jams featuring flavours such raspberry grappa, blackberry shiraz and strawberry aniseed. For those looking for a more substantial accompaniment to their Earl Grey, the Sensory Lab also offers a tartine menu that changes monthly, and has featured such delights as duck and orange pate, cornichons and watercress.
