Radio Taco is a tiny Chippendale taqueria that went properly viral for its birria tacos. The 12-seat restaurant has the feel of an old-school Mexican taqueria, with cherry-red seats, hand-painted signs and an open kitchen where the chefs chop in full view. It's casual, colourful and very much about getting stuck into your food. By the way, notice there's no sombrero in sight. The signature quesa birria tacos are the thing to order: crisp tortillas filled with slow-cooked beef, melted cheese, onion and coriander, then served with a cup of rich birria consomé for dunking. The beef is cooked for eight hours with dried chillies and plenty of spices, giving it a deep, savoury flavour. You can also order the birria as burritos, nachos, rice, or loaded fries, with chicken and mushroom options available too. Wash them down with a Jarritos, horchata, or agua fresca, before finishing with the warm cinnamon churros for dessert. Radio Taco has had its share of queues since opening, but takeaway is a good way to get your birria fix without waiting for one of those 12 seats. Images: Alana Dimou.
