Lovers of meat, rejoice. Perennial Wellington favourite Wilson Barbecue has just set up shop smack bang in the heart of the city, and it's already proving to be a dangerous after-work temptation for those based in the CBD.
For a limited time, the team that brought you Wellington's official favourite burger of 2018 will be serving their irresistible barbecue creations at POP, a pop-up bar based in the Dr Henry Pollen House on the corner of Willis and Boulcott Streets. Husband and wife team Casey and Blair have jazzed up their menu, adding some new twists to their reliable stalwarts, and there is sure to be something for everyone.
We're definitely eyeing up their signature beef brisket — smoked for ten hours, it's imbued with that low and slow flavour that's so damn difficult to replicate. You can also feast on pork ribs, pulled pork, chicken and sausages. Want a bit of everything? Get one of their 'sharing' platters (the apostrophes are ours — we won't judge if you decide to have it all yourself).
Or why not grab one of their burgers, sliders or tacos? The brisket cheeseburger, a nod to Wilson Barbecue's spectacular creation that took the city by storm during Burger Wellington, definitely looks a winner. Complement your burger with their range of sides (croquettes and mac 'n' cheese bites, to name a few) for the complete meal.
You'll of course want a good tipple or two to wash everything down, and this is where POP comes in. Their flagship offering, the $10 espresso martini on tap, is sure to be a crowd favourite this summer.
Wilson Barbecue promise they'll be at their new central spot for a good time, not a long time — so get in there and tuck into that barbecued goodness while you can.
