Just a few short years ago, Codie Palmer was an electrician who dreamed of turning his rum obsession into more than just a hobby. Now, he's a master distiller with his own Western Australian outfit dedicated to crafting the spirit he loves.

On a farm in the state's midwest, Illegal Tender Rum Co whips up small-batch rums in a 1200-litre still — and only makes 3000 bottles per month, maximum. Dark rum takes pride of place among the company's range, including a spiced variety barrel-aged in ex-shiraz French oak casks; however white rum fans can add the brand's double-distilled un-aged cane spirit 1808 Barely Legal to their must-drink list, too.

Rum lovers can head by Illegal Tender Rum Co's base in Springfield for behind-the-scenes tours, and to pick up spirits from its cellar door.
