Overview

After taking over Dominion Road's The Midnight Baker, plant-based initiative Forest is heading back to Grey Lynn for a taco pop-up.

Forest is the creation of chef Plabita Florence. The philosophy of the pop-up is to highlight wild plants that are literally overgrown throughout the city and to utilise underrated parts of produce that are normally destined for the bin. Plabita's previous tasting menus have featured the likes of purple kumara gnocchi with black garlic broth, and smoked beets with nasturtium mustard and silverbeet stalk pickles. Needless to say that you shouldn't expect dollops of sour cream and guacamole at the taco pop-up then.

Held at Wise Boys Burgers (604 Great North Road) on Monday, 19 August, the one-off event will see Plabita work with fellow Forest team member Victor Flores — who hails from Guadalajara — to serve authentic Mexican tacos. In true Forest style, everything will be plant-based, with a focus on local produce and minimal waste. The ingredients list spans everything from lovage cream, seaweed mayo and wood sorrel to carrot tops, refried chickpeas and beer-battered adobo cauliflower. There will be three flavour combinations available, all served in handmade corn tortillas. To match will be a traditional chia lemonade and an oatmilk horchata.

The pop-up will run from 6–9pm and is first come, first served.
