For three nights in November, contemporary European-Mediterranean restaurant Gypsy Caravan will invite guest chefs into its kitchen for a series of globetrotting pop-ups.

To kick off the event on November 6, Conor Wiremu and Alok Vasamth, the respective head chefs of Ponsonby's Orphans Kitchen and modern Indian restaurant Cassia, will present A.L.T. Cuisine. The collaboration will see the pair throw the rule book out the window and merge the contrasting cuisines of Japan and India.

The following night, Sydney chef Adam Wolfers will jump the ditch to offer diners a taste of his eastern European pop-up, Ételek. The five-course meal will see Wolfers honour his heritage by reimagining Jewish classics and Hungarian comfort food. He is known for using the foundations of Israeli, Hungarian, Austrian and North African cuisine with locally-grown produce.

Closing the pop-up series on Wednesday 8 November, Gypsy Caravan's own head chef Touvai 'Tee' Poloniati will put vegetables in the spotlight with a full vegan menu. Poloniati is already for known his work with greenery; earlier this year he dedicated an entire month to plant-based cuisine. The pop-up name Feleoko (meaning 'pantry') comes from his Tongan heritage.
