As a graduate of Lorenza di Medici's cooking school in Chianti, Paolo Pancotti is well versed in the secrets of authentic regional Italian cuisine. For his appearance at Auckland Restaurant Month, the chef will bring back the ever-popular Tuscan grill menu at inner city bistro Vivace. The cooking technique utilises a sturdy metal grate over a fire, infusing smoky, charcoal flavours into dishes.
