Combine a recipe dating back to the Second World War with 100-percent Western Australian grains and a passion for making standout handcrafted spirits, and that’s Whipper Snapper Distillery. Founded in 2013, it doesn’t just take inspiration from two WWII pilots, but also it uses their whiskey formula — as refined over the years — to whip up its beverage of choice. Located in East Perth, this urban distillery has multiple varieties of whiskey on its lineup. That includes Australia’s first quinoa whiskey, which is clearly something you don’t get to sip every day. Also on offer is moonshine, whether you’re after a crystal-clear drop or prefer a straw-coloured, barrel-aged type.

Pouring a drink and overcome with a big dose of city pride? Australian Distilling Co certainly hopes so. The Aussie outfit’s whole remit is making gins that pay tribute to local places — with its master distiller teaming up with distilleries in each region to craft drops that reflect everywhere from Brisbane and Sydney to Bondi and Adelaide. In the case of the aptly named Perth Gin, lemon myrtle features heavily. Handcrafted in small batches, this easy-drinking spirit is designed to celebrate its namesake. Australian Distilling Co’s entire range has also proven quite the award-winner, too, picking up 56 gongs in the past 18 months.

Just a few short years ago, Codie Palmer was an electrician who dreamed of turning his rum obsession into more than just a hobby. Now, he’s a master distiller with his own Western Australian outfit dedicated to crafting the spirit he loves. On a farm in the state’s midwest, Illegal Tender Rum Co whips up small-batch rums in a 1200-litre still — and only makes 3000 bottles per month, maximum. Dark rum takes pride of place among the company’s range, including a spiced variety barrel-aged in ex-shiraz French oak casks; however white rum fans can add the brand’s double-distilled un-aged cane spirit 1808 Barely Legal to their must-drink list, too.

Australian cricket fans should spot the significance of SevenZeroEight Gin’s name straight away, especially if they’ve been paying attention to the game over the past few decades. That’s the number of test wickets that Aussie cricketer Shane Warne took and, if you haven’t guessed from that moniker, this is the sportsman’s very own gin collection. SevenZeroEight’s range is made in Western Australia using local botanicals, with citrus and thyme among the noticeable flavours. And, while it only crafts two types of gin, one particularly stands out — with SevenZeroEight 23 offering up a mid-strength, low-calorie sip for when you’re after a cocktail with all of the flavour but a little less kick.
