High tea at Auckland's recently opened Park Hyatt arrives across several plated courses rather than one standalone tower. In line with the silly season the property's waterfront dining space The Living Room has launched the new Summer Afternoon Tea.
The festive twist on the traditional afternoon tea offers five sweet and savoury courses. The two-hour plated experience was designed by pastry chef Callum Liddicoat. It features modern twists on some Christmas favourites including traditional mince pies, lemon meringue bombe alaska and festive treats incorporating crab, caviar and oranges.
The experience begins with cured kingfish, nectarine and bonito served with sparkling tea. The second course offers cornbread and caviar, accompanied by a lime coconut and avocado splice, and a black sesame and passionfruit sphere.
Then, it's a pistachio and raspberry financier and the Christmas mince pie before the service ends with a jam drop. The Classic Afternoon Tea includes a tea selection or guests can choose to add a glass of champagne.
