Overview
As a graduate of Lorenza di Medici's cooking school in Chianti, Italy, Paolo Pancotti is well versed in the secrets of authentic regional Italian cuisine. For his appearance at Auckland Restaurant Month, the chef will bring back the ever popular Tuscan grill menu at High Street bistro Vivace. The cooking technique utilises a sturdy metal grate over a fire, infusing smoky, charcoal flavours into dishes.
The four-course long lunch will start with a glass of prosecco on arrival followed by delights including traditional house cured meats, pan-fried cod, octopus salad, gnocchi with aromatic butter and confit chicken leg and pannacotta. For those looking to make it a family affair, Vivace's three private dining rooms will be available for groups from 12 - 20 guests.
