A New Upmarket Chinese Restaurant is Coming to Federal Street
You can expect far more than an MSG-soaked mountain of sweet and sour.
Cloaked for months with nothing but a sign reading 'Chinese Restaurant Coming Soon', the latest restaurant to join the ranks of SkyCity's Federal Street has finally been unveiled.
Huami is touted as a "contemporary authentic Chinese restaurant", set to serve up "a taste of old Shanghai". SkyCity has enlisted several notable dining and hospo experts for the opening, including fellow Federal Street resident and the brains behind Japanese robata restaurant, Masu, Nic Watt.
Jeff Tan has been roped in as executive chef. He arrives at Huami after a comprehensive career at some of the finest restaurants in Asia and the Middle East. Kai Zhao will lead the front of house as restaurant manager and master sommelier Cameron Douglas will contribute to the theme of '1930s Shanghai' with a comprehensive wine list.
Chef Tan's menu will highlight the cuisine from regional provinces across China including Canton, Sichuan, Huaiyang and Beijing, while using local produce. A few dishes in the test stages include: deep-fried soft shell crab with oatmeal and crispy egg yolk, crayfish with Sichuan mapo tofu, and clear soup with shrimp wonton. If the translation of 'Hua-mai' to 'nectar' is anything to go by then you can definitely expect far more than an MSG-soaked mountain of sweet and sour.
Huami will open its doors to the public on Saturday 1 July.
