Hippopotamus Rising: Pop-Up Degustation

Overview

Uncertain times call for multiple courses from a reliable New Zealand chef. Jiwon Do took the reigns of QT Wellington's Hippopotamus back in 2018, bringing signature dishes like the Le Chevreuil Sauvage and breaking new ground with combinations like raspberry meringue and kelp.

This month, Do is serving up five courses at the restaurant and cocktail bar for two nights only. The Hippopotamus Rising menu will set you back $95 per person — with optional wine matches or libations by head sommelier Florent Souche.

Joining the party you'll feast on all means of decadent dishes, like paua tortellini, wild venison carpaccio, crayfish and prosciutto roulade, and lamb rack with black garlic gnocchi — and that's not including the included palate cleaner and dessert. See the full menu here.
