This Wellington Barbecue Joint Is Now Selling Ready-to-Eat Low 'n' Slow Meat

Wellington's Wilson Barbecue is best known for its irresistible meaty creations. The American-style low 'n' slow barbecue joint, which originally started as a food truck and has since popped up across the capital, famously prompted a burger frenzy in 2018 with its smoked beef short rib burger.

Wilson's husband and wife team Casey and Blair were due to open a brick and mortar location in Johnsonville this month. Halted by the COVID-19 lockdown, the pair have turned their cooking talents to ready-to-eat meats for those looking to recreate the experience at home.

You won't need ten hours up your sleeve or an almost-two-tonne smoker — the hard work has already been done. Wilson's ready-to-eat range arrives in vacuum-sealed bags and only needs to be heated before hitting your plate. On the menu you'll currently find Wilson's signature beef brisket, pork ribs and pulled pork — all of which give off smoky Manuka notes.

The smoked brisket and pulled pork can be purchased in 500-gram portions, while the half brisket and whole brisket servings are ideal for large bubbles up to 20 people. Ribs can also be purchased as a half rack or whole rack. While you'll definitely want the meat, the eatery has also started selling pork rub and barbecue sauce which pairs well with anything smoky.

Wilson Barbecue is shipping its ready-to-eat meats all over the country. Orders placed by midnight Friday, 24 April will be sent on Tuesday, 28 April. Under the COVID-19 Alert Level 3, Wilson Barbecue hopes to offer the full experience in the capital with contactless deliveries, including all the meaty favourites and sides like potato salad and mac 'n' cheese.
