The monopoly supermarkets once held over us food eaters has waned in recent years. Market halls are becoming the logical response to people's renewed interest in small batch, bespoke, local, sustainable, organic produce, because who wants to spend hours traipsing all over the city looking for the good stuff? Not us. Luckily, Sydneysiders will soon have a brand new providore marketplace which will bring all the aforementioned things together in one location for you to pack into your roll-along nanna trolley.

Saporium will be the latest addition to The Cannery, a huge 4500-square-metre retrofitted warehouse in Rosebery, which already houses Archie Rose Distillery, Black Star Pastry, Koskela and Italian restaurant Da Mario. Designed to bring everything you need to live a wholesome, healthy life together in one place, the marketplace will have a greengrocer, a butcher, a baker, a coffee roaster, restaurants and a cooking school.

It's been in development for some time. The first stage saw Grain Organic Bakery, Zeus Street Greek, 5th Earl and The Choc Pot open their doors, and last week the latest batch of tenants opened for business. Rosebery and Green Square locals now have Vive Cooking School, organic grocer Wholefoods House, Kingsmore Meats and Welcome Dose Specialty Coffee on their doorstep. The details of stage three have yet to be announced but will build on the theme of 'local as hell'.

And with the news that Three Blue Ducks will be joining The Cannery gang later this year, moving to Rosebery seems like a very wise choice.

Saporium is located in The Cannery at 85 Dunning Avenue, Rosebery. For more info, visit saporium.com.au
