Overview

Lobby Bar is the all-day dining anchor of The Calile, Brisbane's benchmark for modern luxury and a regular on the World's 50 Best Hotels list. Positioned at the hotel's entrance on James Street and spilling into Ada Lane, it runs from breakfast through to dinner, with drinks on offer the whole way through.

Executive Chef Raul Hinkson, who brings more than 30 years across Michelin-starred kitchens, now oversees the menu, drawing on produce from the hotel's own rooftop kitchen garden alongside a close network of local growers.

That seasonal, produce-first approach shows up in dishes like kingfish crudo with rooftop chilli, rooftop basil pesto pasta, and a 300g wagyu rib eye finished with rooftop herb butter, alongside a raw bar of oysters and K'gari prawns. Sticky date pudding and the cake of the day round out the sweeter end of the menu.

The setting matches the ambition: Richards and Spence's design leans into Brisbane's subtropical climate with breezeways and lush planting, giving Lobby Bar the same polished, relaxed feel as the rest of the hotel.
