    Naïm

Once you’ve gone shak, your tastebuds won’t turn back — from a big plate of shakshuka, that is. Hailing from the Middle East, Mediterranean and North Africa, this egg and tomato-heavy dish is a firm highlight on Naim’s stacked menu. The Paddington eatery has a hearty version; the eggs are baked with a tomato and capsicum sauce, paired with saffron labneh, white beans and kalamata olives. You’ll also nab some housemade challah bread, which comes toasted, to help soak it up. Keeping with the joint’s Middle Eastern-theme, you can add an optional merguez sausage as well.

Mushroom and egg roll from Yolk Brisbane

With a name like Yolk, there’s no prizes for guessing which food this Newstead newbie favours. Eggs are a part of almost every dish at the just-opened sister sibling to Morning After and, to keep the circle of life going, sometimes you’ll find chicken, too. In the healthy stakes, however, you won’t want to go past the mushroom and egg roll. Better for you than its bacon and steak counterparts — and obviously suitable for vegetarians, too — it keeps things simple but delicious. If you’re looking for ways to soak up all the vitamins A, B12, D and E that eggs boast, plus iron and omega-3s as well, this has you covered.

The New Black Kangaroo Mince Eggs

Had a big night out in Fortitude Valley? You might not be thinking about heading back the next morning, but making the trip in for The New Black’s kangaroo savoury mince is worth it. Kangaroo meat is known for its low-fat, iron and zinc-filled properties, so you’re already doing your stomach a solid — and this dish doesn’t stop there. This Bakery Lane favourite also piles on a pickled chilli heirloom tomato, potato hash filled with rosemary and confit garlic, freshly made pea mousse and a poached egg. Prepare for a combination of tastes and textures, especially when your gooey yolk combines with the mince, hash and mousse.

Breakfast Carbonara dish from Morning After

When you were a kid, you probably thought that having ice cream as a meal was the height of rebellion. Fair enough, too. As an adult, eating carbonara for breakfast feels much the same way. Ignore whatever you’ve been told about which kinds of foods to eat and when, because Morning After’s locally famous dish will have you wanting to start your day with pasta as often as you can. The West End cafe’s creative concoction combines pappardelle, field mushrooms, smoked pancetta and manchego — and it wouldn’t be the same without those 63-degree hens eggs. And, if you’re a late riser, you can tuck into this until 4pm every day.

    Parship pakora from Florence Cafe

Add a bit of zest to your brunch with Florence Cafe’s Indian-inspired option: a parsnip pakora paired with sweet potato puree, persimmon chutney and confit tomato, plus pickled chilli and topped with an egg. Spicy dishes are great for your immune system, and so are all the nutrients packed into eggs, so this is a particularly helpful way to regain the spring in your step on a hazy weekend morning — or any morning really. It also comes with a papadum, naturally. If you’re feeling extra famished, you can also opt for haloumi and a ham hock as well.

    Gauge - CLOSED

Gauge’s brunch game is fierce — especially when you’re hankering for a nutritious but far-from-ordinary meal. The restaurant’s black garlic bread has become the stuff of local legend, and it’s the type of thing everyone needs to try once. However the crumpet toast with soft egg, brown butter, chicken mortadella and pork crackling is just as worthy of widespread acclaim. First, there’s the light, fluffy bread. Second, there’s the mortadella, crackling and egg topping. It’s a considerable dose of protein in this flavour-filled dish.
