Following a massive five-year renovation, Hotel Sorrento unveiled a chic new look in 2025, marking a new benchmark for coastal luxury in Victoria. Now, the Mornington Peninsula's uber-cool, world-class boutique resort has expanded its offerings even further, unveiling the refreshed Dining Room, serving Mediterranean plates, fresh seafood, and coastal beach house vibes, right in time for the warmer weather. The pub has been in the Pitt family's hands since 1981, and over three generations, it has undergone extensive transformations, including this latest multi-phase project. First, the development added luxury accommodation, a pool, and spa and wellness facilities to the venue. Further upgrades included a New York-style Lobby Bar, an openair wellness terrace, conference and event facilities, and several new luxury suites. The drinking and dining options have now been expanded even further. "We've built the Dining Room around the food we love to eat. It's fresh and classic dishes done well – the kind of food you crave after a day spent at the beach. We want guests to feel like they're at their beach house: grab a table or stool at the bar and let us do the rest," says Myles Pitt, Director of Hotel Sorrento. Like the Lobby Bar, which is inspired by venues such as The Bowery Hotel in New York, the Dining Room has been redesigned by Six Degrees Architects. The new space takes its cues from the Riva runabout speedboats of Lake Como; think timber curves and retro elegance. The reinvigorated menu, developed by Executive Chef Beth Candy, leans towards group dining; think long leisurely lunches and unrushed dinners. Fresh seafood is a core focus, with the likes of grilled local scallops, wood-fired whole market fish, crudo of the day, fettuccine with mussels and caviar served with the works. Pub staples remain, alongside a selection of grass-fed Angus steaks cooked over the woodfire. As part of this new reveal, the hotel's Cantonese restaurant shihuisi has introduced Charlie Foo: a hideaway speakeasy that can accommodate up to 20 guests. It's the perfect spot for group dinners, celebrations, or parties, with a little extra privacy. Upstairs, the hotel's openair terrace complements the hotel's wellness offering, Marlo Spa. With sea views, a travertine yoga deck wrapped in lush greenery and sun-soaked, laid-back vibes, it'll be a great spot to settle in over summer.
