This is award-winning British chef Simon Rogan's first restaurant in the Mediterranean. From its vibrant atmosphere to its seasonal menu inspired by local produce with sustainability at its forefront, it's everything you'd expect it to be

The restaurant enjoys breathtaking views of Port of Valletta, or the Grand Harbour, from its location on the fourth floor of the Iniala Harbour House Hotel. 

ION offers two tasting menus, one for dinner and a shorter version of lunch, which includes a starter, main course and dessert. Diners can opt to pair their meal with a glass of vino from the venue's considered wine list or select a unique beverage on the drinks list made from surplus fresh produce from the kitchen — a mindful way of reducing food waste.

Rogan is a prominent advocate of farm-to-table cuisine, a philosophy he brings to his first eatery in the region. All the dishes are made with local ingredients that are harvested, fished, farmed or foraged in the most environmentally conscious way possible. ION even has its own head of sustainability to ensure suppliers and growers conduct their craft in a sustainable fashion.
