Melbourne lands another specialty baker, with BakeStand set to redefine the city's cookie game. With its second location at Melbourne Walk, BakeStand introduces what they call 'Melbourne-style' cookies to the CBD.
BakeStand's signature product, its cookies, are defined by a distinctive texture and come in a variety of classic and inventive flavours. With a soft centre and crisp, tart-like edges, the cookies are a real crowd pleaser.
The cookie brand is the brainchild of hospitality partners Vi Thao Tran and Executive Pastry Chef Steven He, who boast many decades of pastry and baking experience across leading patisseries.
Chef He says, "BakeStand came from the idea of taking something familiar, a cookie, and transforming it into an experience that is elevated yet still playful. We kept coming back to the idea of a 'Melbourne-style cookie' — something that feels familiar, but with a level of care and creativity that reflects this city. It's about taking a classic and refining it, from the texture through to the flavour combinations, so it feels considered but still really enjoyable."
BakeStand's menu is designed to evoke nostalgia and inspire novelty, featuring premium ingredients such as Pepe Saya butter and Valrhona chocolate. While you can grab an OG dark chocolate with sea salt, you can also sample a Vegemite-and-cheese creation. There are also on-trend flavours such as matcha strawberry and banana bread, and complex inventions such as hojicha chocolate, campfire s'mores and caffe mocha.
The new Melbourne Walk store, designed by Reve Design, is inspired by Alice's Adventures in Wonderland, creating a delightful and surprising sensory experience. "Each location carries its own identity, but they're unified by a sense of curiosity and discovery — spaces that invite people in and encourage them to stay. It's an experience designed to shift your mood — somewhere that feels distinct from the everyday, yet effortlessly part of it," says Tran.
To celebrate the grand opening, BakeStand will offer a buy-one, get-one-free promotion on Thursday, May 28, and hand out free merch to the first 100 customers each day between May 29 and May 31.
