When it comes to pizza in Perth, long gone are the days of deep-pan meatlovers, a cheese crust and two-litre bottle of cola. We've evolved.

Today's bases come straight from the streets of Napoli, and the toppings are influenced by travels all over the world. The offerings on this list include restrained margheritas carrying the smoothest fior di latte, indulgent creations laced with truffles and American fast food-inspired abominations that arouse horror and delight in equal measure.     Dough Room has one of the best pizzas in Perth

    The Dough Room thinks outside the (pizza) box with the likes of a charcoal diamond crust — pitch black and very fun. But we remain loyal to the old faithfuls. This place nails the simplicity and utter perfection that is a margherita with fior di latte or the combo of eggplant, ham and mushroom (which they title Ms Loren). The key to their success is that base which is light and fluffy and everything you could hope for. Lucky Attadale.

    Mack Daddys is one of the best pizzas in Perth

    It may have been during Seinfeld or Sex and the City, or it may have been as you gracelessly folded a slice into your mouth in the East Village, but wherever your love for the New York-style pizza originated, no one’s arguing. Big and cheesy is the name of this game, and Mack Daddy’s delivers the goods. Treat yourself; go all out with 22 inches of buffalo chicken (complete with Louisiana base sauce and blue cheese). FYI: BYO.

    Threecoins Italian Trattoria - CLOSED

    As a general rule, anyone who grew up around some of the world’s best truffles and pork can cook for us any day of the week. And that’s certainly the case with the Trequattrini family, who runs this restaurant and gives it its name, interpreted literally into English as Threecoins. Walk in here and you’re immediately transported to Umbria. Nothing fussy but pure neighbourhood deliciousness. Light as a feather and simple in toppings, this is A-grade woodfired Italian pizza. Make this the time you go for a bianche (mozzarella base) — the perfect accompaniment to toppings like truffle oil and porcini mushrooms or gorgonzola and red onion.

    Manuka is one of the best pizzas in Perth

    Team Freo are all over Manuka, and for everyone else, it warrants the drive. We are yet to order something from this kitchen that doesn’t have us salivating the moment it hits the table. Imagine a restaurant where dishes include sake-marinated octopus grilled over jarrah coals and slow-roasted lamb with smoked labne, then imagine how good the pizzas must be. Its woodfired crust deserves a prize on its own. Word to the wise: the $22 blue manna crab with fennel and chilli oil is a steal for the quality and flavour.

    Alfreds is one of the best pizzas in Perth

    We’re a bit obsessed with Alfred’s in the city, and why wouldn’t we be? Tucked under a staircase on Barrack is a craft beer haven with eclectic surroundings, a creative cocktail menu, an unpretentious vibe and actually good music. And it just so happens to also be a pizzeria slinging straight-up winning pies till midnight. With meatballs cacciatore, truffled ricotta, garlic butter and hummus making appearances on the menu, it’s far too hard choosing our fave, so just go hungry and order as much as you can.

    It claims international awards for its pizza, so you know Theo & Co is legit. Whether you’re into vegan pies with chia seeds rolled into the dough, Texan-style toppings with smoked beef short ribs, Chicago-inspired deep-dish skillet pizzas or a classic margherita loaded with WA-made mozzarella, this is one of those menus that caters for every palate. So much so, it’s almost overwhelming. But for $20–25, who cares? Go bold. Both Leedy (licenced) and Vic Park (BYO) are solid, any night of the week.

    Propeller makes one of the best pizzas in Perth

    We want that green wall, we want the aprons, we want the glassware, we want the shipping container. OK, we just want to live and breathe Propeller. Its offering is not quite what we typically think of as pizza, but there’s a flour and water dough, melty toppings and that sense of soporific satisfaction when you’re done eating, so we rule it counts. This is manoushe, a Lebanese za’atar flatbread. Have yours with mushrooms, lamb, Turkish eggs or on a mezze board (all under $20, we might add).

    When you’re seated and served by someone with a strong Italian accent, you just know you’re going to be fed well. The feeling at Spritz is like a party in an Italian village, where the food is straight from Nonna’s cookbook. If you’ve got room after eating the insanely good ravioli, the pizza is the next best thing. They’re well-executed classics, but if you’re after something out of the ordinary, ask for a rotolino della casa and await the magic that is truffle cream rolled up in a pizza base.

    Monsterella is one of the best pizzas in Perth

    Monsterella’s BYO magic has lit up Wembley and is woodfiring its way to the absolute top. Go with the Milliano (featuring buffalo mozzarella, Italian fennel sausage, caramelised onions and oregano topped with pecorino and truffle oil) and Capri (fior de latte, leg ham, mushrooms, grilled artichokes and black olives). A booking is an absolute must at this suburban gem, and if you can squeeze in the hand-cut truffled pappardelle with a side of rocket, parmesan and walnut salad, your soul will be theirs for life.
