Bobby Chans Brings a Beach Club Escape to the Heart of Sydney CBD
A new 120-seat restaurant is joining the Cabana Precinct, with king crab fried rice, sesame prawn toast bao and Asian-inspired cocktails coming to 25 Martin Place.
Sydney CBD is getting a new escape from the working week, with Bobby Chans opening at 25 Martin Place in October as part of the Cabana Precinct. The 120-seat restaurant comes from Sydney hospitality group Tilley & Wills Hotels, which is also behind Cabana Bar, Verandah and Greenwood, and will pair Southeast Asian share-style dining with cocktails in a beach-club-style setting.
Timber, bamboo, rattan and natural textures will shape the space, giving Bobby Chans a relaxed feel for long lunches, after-work drinks, dinners and late nights. It's a change of pace from the usual CBD routine, with the setting designed to carry a meal into drinks without needing to head elsewhere.
Executive Chef Brad Sloane has drawn on flavours from across Southeast Asia for a menu built around sharing. The menu covers a few different corners of the region, with Skull Island prawn dumplings served with crispy miso chilli oil, steamed chicken momos with piro achar and curry leaf, and sesame prawn toast bao among the smaller dishes. For something more substantial, there's Babi Guling-inspired pork with coconut salad and lime, plus Bobby's king crab fried rice.
Sloane's time travelling through Southeast Asia has helped shape the way those cuisines and flavours come together on the menu, with the chef getting to know the local food, meeting people and learning the techniques behind the dishes. "We didn't want to simply take inspiration from Southeast Asia from afar," says Chef Sloane. "We wanted to get on the ground, eat the food, meet the people and learn the techniques behind the dishes."
The drinks follow the same broad Asian influence, with cocktails ranging from an Ube Colada and Thai Basil Gimlet to a Szechuan Margarita and Bangkok Calling. Imported soju, sake and beers will also be available.
