This beloved neighbourhood haunt that knows how to revamp an age-old favourite. Glebe locals can vouch for Mr Falcon’s cosy, small bar vibe, with its winding staircases and abundance of plush sprawling couches that make you feel instantly at home. Yet what many might not realize is that these guys know how to take the traditional G&T to the next level. Head to the bar and make sure to order the Four Pillars gin topped with basil and strawberries for a fresh take on a tried and true classic.

For those who want their drink truly tailor-made, Middlebar is the place to head for your next gin and tonic. Located above Kinselas overlooking the bustling Taylor Square below — where Lo-Fi used to dwell — this spot lets you decide exactly how you want your drink to be enjoyed. Select your favourite gin and mixer from their chalkboard menu, add a garnish and enjoy your personalised concoction from a traditional Spanish copa glass (ensuring maximum flavour and aroma with every sip).

If The Powder Keg’s entirely gin-themed menu wasn’t reason enough to make a visit, we’ve got a few more for you to swallow. This 17th century Dutch pub-inspired Potts Point restaurant and bar has added some much needed spark to the pretty unremarkable Kellett Street, bringing drinkers one of the largest boutique gin collections in the Southern Hemisphere. Offering a traditional G&T inspired by the 1700s original, their menu allows drinkers to choose between over 110 international gins, eight tonic waters and even ice options ranging from hand chipped to regular Hoshizaki cubes. Plus, they have a killer happy hour — $6 G&Ts between 6-7pm from Wednesday to Sunday — and they have G&Ts on tap.

Despite its whisky-centric menu, the team at The Baxter Inn also have a real handle on how to get the best from their gin. With a basement bar as well-stocked as theirs, it’s no wonder you’re greeted with an almost overwhelming world of choice upon placing your order. But all your anxieties will swiftly be washed away, as these bartending legends step in to assist in your spirit selection. Poured, mixed and garnished with care, a G&T here even comes with a side of bottomless complimentary pretzels to boot — one of our favourite free bar snacks.

Next time you find yourself in the CBD, take a trip to one of the city’s cheeriest hidden gems. Mojo’s transforms nightly from an unassuming record store shopfront into a lively speakeasy bar that doesn’t disappoint when it comes to a good drink. As far as their G&T game goes, these guys seriously know their stuff. Their top notch team can whip up this knockout classic in record time (no pun intended), hitting the mark with every glass.

A list about gin would not be complete without mentioning this beloved newish Sydney spot. Tucked away in one of Rosebery’s blossoming cultural hubs, Archie Rose is Sydney’s first independently run distillery in 160 years. This passionate crew knows how to nail a perfect gin-based concoction. Pairing their own Dry Gin, crafted from a blend of fourteen unique botanicals, with PS Soda’s specialised bush tonic, this crisp drink comes served with a lemon slice and juniper berries to get your tastebuds really singing. Plus, we awarded Archie Rose Best New Bar of 2015 last year, we’re big fans.
