Kuon is located right in the heart of Sydney's Chinatown and the hub of Asian cuisine. We sat down with Head Chef Hideaki Fukada to chat about passion, precision and his sushi knives.

What sets Kuon Omakase apart from the other stunning omakase restaurants in the city is the incredibly intimate size of the venue, with only a dozen seats, the chef's counter, a few drinks fridges and a smoker taking up residence inside.

Kuon Omakase regards itself as "modern Japanese Edomae sushi": an evolved, refined way of enjoying sushi and combining elements of the west and east, old and new. At Kuon, guests can enjoy aged sushi served with sake alongside fresh seafood caught off the coast of Australia — everything in balance.
