Tucked away on Thornbury's unassuming Wales Street is Rat the Cafe, a local fave for brunch and speciality coffee in an airy, understated setting. The tidy menu is a constantly evolving one, often guided by the cafe's commitment to reducing food waste while showcasing organic produce as much as possible. If you can get your hands on one — they're pre-order only — the must-try is the breakfast sandwich, featuring swiss cheese, house-made sauerkraut, special sauce, dill pickle and a fried egg, to which you can also add Meatsmith bacon.
