Bar Luca Is Opening a Build-Your-Own Bowl and Burger Bar in Newtown

You'll be able to choose from 70 toppings, 20 sauces and bases like a burger bun, mac 'n' cheese and tater tots.

It's been a fruitful couple of years for CBD burger joint Bar Luca. Not only has it introduced one of Sydney's best burgers — the Blame Canada — to the populace, but it's also spawned three takeaway outlets that focus solely on their mouth-watering burgers — one in Darlinghurst, one at Bondi Beach and one in Parramatta.

But it won't stop there. BL brains Sarah and James Robbins have announced a new venture: a create-your-own meal outlet in Newtown. And it's not like any of their other places. They'll be moving away from the rigid wall menu and towards something a little more flexible offering a whole lot more than burgers.

The new menu will have eight bases to choose from, including tater tots, corn chips chili con carne, a hot dog and a fried mozzarella cheese patty as well as the regular hamburger. Add some extras — popcorn chicken, fried haloumi, shoestring fries, kimchi and even peanut butter — and there will quite literally be something for everyone here. In total, over 70 ingredients and toppings will be involved, so if you struggle from indecision this is probably going to give you a headache.

The duo has had the concept planned for a while and snapped up their ideal location — which housed the now-closed Jacks Newtown, also a burger joint — when it came up. "When we saw the site was vacant we jumped on it and contacted the building managers before it was listed for lease," says Robbins. "We knew it was the perfect spot. We love Newtown and live local, it just all felt right."

There will be 20 sauces to add on top of your extraordinary creation, including chipotle, aioli and salsa verde. Robbins also plans to bring in shakes and alcoholic drinks in the coming months.
