Overview

On April 1, one of Australia's most awarded restaurants Quay closed its doors for a three-month renovation and menu shake-up. This morning it was announced that it will be unveiling its new look later this month, on Thursday, July 19.

While the team has been very tight-lipped about what we can expect from the new-look Quay restaurant, it has released its new menu format — a ten-course degustation, which'll set you back a smooth $275 (a slight hike from its previous price of $245). Luckily, that's not your only option. Starting from Friday, August 3, you can head in between Sunday to Thursday for dinner, or Friday to Sunday for lunch, and get a six-course menu for a neat $210.

In terms of what exactly you'll be getting for $275, executive chef Peter Gilmore has not yet said — although it was confirmed earlier that the famed Snow Egg would not be making a return. One dish, however, that may be appearing on the new menu, and has been hinted to several times on the restaurant's Instagram, is a new-look oyster.

While decor details have been equally scarce, it was announced earlier the Peter Gilmore would be again teaming up with TZG architects (who designed other Fink Group restaurants Bennelong and Otto Brisbane) for the fit-out, which will mimic Gilmore's approach to food — with elements of texture, nature and intensity in the design.

The Quay team has also released hints about its new bespoke crockery via social media. The restaurant has teamed up with ceramicists Jacqueline Clayton and Paul Davis — owners of StudioJam, which created ceramics for Noma Australia — to create some stunning pieces for the renovated restaurant, including the above oyster.

If you're eager to be one of the first to get a look at the newly renovated Quay restaurant, we suggest booking yourself a reservation, tout de suite, as bookings opened this morning. You can snag a table online or by calling the restaurant on (02) 9251 5600.

Quay will reopen on Thursday, July 19. Reservations are now open.
