If you consider yourself a coffee lover, you'd probably turn up your nose at the mere thought of the instant stuff. We don't blame you — it's often made with inferior product that's overly roasted to cover up any defects (there's a reason it's so cheap). You've also probably upgraded your at-home brewing equipment since your uni days, meaning that jar of instant you keep at the back of the pantry is reserved only for dire circumstances.

It might be time now, though, for the instant stuff to take centre stage in your morning ritual. Sustainable Aussie coffee pod pioneer Tripod — whose compostable coffee pods remain a fixture in Concrete Playground towers — has just unveiled an instant brew that's as responsible as it is delicious.

Unlike the majority of instant coffee in market, Tripod's Three Capes 'Just Add Water' specialty instant is produced via a slow-brew extraction process using specialty-grade Ethiopian single origin beans. The beans themselves come from small farms and are officially graded and cupped for flavour.

Next, the perfect amount of liquid is extracted from the beans. To do so, the Tripod team essentially creates a big filter brew, running water through the beans. The coffee liquid is then freeze dried and ground to a fine powder, which locks in flavours and helps to preserve the coffee naturally. It also helps avoid that bitter aftertaste usually associated with instant.

The resulting brew is not your average cup of gritty, bitter instant. It's far from it, in fact. The medium-strength Three Capes Blend, with its notes of ripe blueberry, dark cocoa and jasmine, is a premium instant brew that is more akin to a perfectly made long black — without the bougie price tag, that is.
