Australians (and human beings in general, in the Western world) have an affinity for the burger. But what makes the perfect burger? A juicy pattie, the type of bun, or the perfect combination of ingredients inside the bun? The answer is all of the above, plus some.
Streetsoul Burger Bar at Randwick's popular 'The Spot' is certainly making a name for itself with its sustainable philosophy, using the most ethical produce in its burgers. The restaurant has a casual, urban theme, with a large Gandhi stencil adorning the main wall. More street art is strewn around the space, with outdoor seating providing a relaxed environment for diners. By day, sun streams through into Streetsoul and at night the lights are dimmed, with the music always turned up loud.
There are six main types of burgers — including two vegetarian options — with the diner able to customise each burger. The Beef Man ($10.90) features grass-fed beef with baby cos lettuce, tomato, Spanish onions, aioli and tomato relish. I opted to "Make it Cheesy" (an extra $2.50), adding cheese, dill pickles and mustard. The beef is juicy and tender, dissolving in your mouth as you pack in all of the fresh vegetables and fresh bun. Definitely a winner.
The Straight Chicken ($12.90) with free-range chicken breast is also enjoyable. The marinated chicken infused with thyme lifts the burger, and after adding the "Make it Mexican" option with guacamole, chipotle and sour cream, I'd found my new favourite go-to burger house.
You must try the fries seasoned with rosemary and thyme ($2.50 side with a burger or $5.50 for a basket) — you'll never want to eat normal chips again. Streetsoul is licensed, so pick up a beer ($6.50-$8.90) from a selection of boutique brews such as White Rabbit and Little Creatures.
The owner, Amit Tewari, is clearly passionate about Streetsoul's message. After we're finished wolfing down our burgers, he pulls up a chair and starts talking about his sustainable philosophy, including the difference between grass and grain-fed beef. He tells me he's visited all of his meat suppliers at their farms around NSW — it's hard not to be inspired by his commitment.
