+81 Sushi Kappo is designed to be experienced quietly. With just 12 seats arranged around a minimalist counter, the West End restaurant removes almost every possible distraction, asking guests to focus on what's unfolding directly in front of them.

If you've spent time at +81 Aizome Bar, you'll recognise the sensibility immediately. The same calm, precision and restraint that define the cocktail bar next door carry through here, expressed through food rather than drink.

This is a kappo-style experience, where the cooking happens at the counter, course by course, in a steady rhythm that prioritises timing and temperature. There's no menu handed over at the start. Instead, the seafood-focused omakase unfolds gradually, moving through sashimi, sushi and cooked dishes shaped by local micro-seasons and select Japanese ingredients. A meal might begin with delicately sliced raw seafood, transition into carefully formed nigiri, and finish with warm, precisely cooked courses that bring texture and contrast into play.

The food is refined without being showy. Plates arrive uncluttered and purposeful, allowing individual ingredients to speak clearly rather than compete for attention. The progression is designed to feel complete but never heavy, favouring balance and clarity over indulgence for its own sake.

The space itself mirrors the approach. Dark neutrals, soft metals and gentle lighting centre attention on the counter, reinforcing a sense of stillness and intention. A considered beverage program of sake, Japanese whisky, champagne and wine follows the same measured logic, with optional pairings that move in step with the menu.

The group's name +81, Japan's international dialling code, reflects the core philosophy: creating a bridge between cultures, craftsmanship and people. Together, +81 Aizome Bar+ and +81 Sushi Kappo reflect the same philosophy – one played out in cocktails and atmosphere, the other through food and time.
