It's what every cafe patron secretly wants: a menu that looks both familiar and different. Those staples every eatery serves are on the lineup — there's a reason that they're old favourites, after all — but they do more than just follow the usual recipe.
On that front, Republic Coffee Traders delivers, with head chef Patrick Laws cooking up a storm. If a brioche breakfast burger with house-made tomato relish isn't the tastiest way to start the day, then we don't know what is. Actually, French toast with ginger-soaked berries and rosemary chocolate cream comes pretty close, as does the plate of veggie goodness that is the forest mushrooms, burnt bonito butter, sesame spinach, picked onions, hazelnut salsa and poached eggs.
Of course, as the name gives away, the East Brisbane breakfast and lunch spot serves up more than a damn good meal. Caffeine lovers, prepare to get your fix of fresh brewed heaven — and grab some beans to take home with you, too. In fact, Republic will soon be roasting their own, because these guys are serious about their coffee.
