    Froze Your Way

    Summer is the season of drinking frozen wine, and there’s one spot in Sydney where you can take things to the next level. Untied has launched a pour-your-own-frosé bar on its Barangaroo rooftop complete with six different slushie flavours to try. Alongside the classic frosé flavour, there are also peach riesling, kiwi melon blanc, watermelon, passion pineapple blanc and frozen Aperol options.

    And your decision-making doesn’t end there. After you’ve poured the tipple of your choice, move along to the pick ‘n’ mix candy station to garnish your slushie with jelly beans, lolly bananas, gummy bears, rainbow straps and sour worms. Each one will set you back just $12 — or $7 during happy hour.     Sydneysiders went crazy for The Winery‘s pop-up prosecco fountain last summer. And in very good news, the venue not only brought back the antique-looking stone fountain to its garden for another season, but it has also done one better by adding Aperol spritz to the tap, too. Head there on a Thursday or Friday from 5pm or on weekends from 12pm to pour your own bubbly and spritzes for a full two hours for just $39 per person.

    If you’d like to pair your drinks with a bite to eat, upgrade your package to the $59 per person option and you’ll also receive a selection of plates from the European-style antipasti menu — think organic haloumi with honey, smoked lamb meatballs or spicy ‘nduja. Bookings are not required.

    Margarita Mansion

    This summer, harbourside spot Bungalow 8 has turned its outdoor area into a Mexican-inspired setting complete with cabana-style seating, tropical plants and even a guacamole cart. Yep, you read that correctly — freshly smashed guac whenever the craving strikes.

    Head along between 4–7pm every day until the end of January and you can enjoy the fresh guac alongside a jam-packed menu of margaritas. Choose the classic tipple for a very reasonable $14 or try one of the six frozen options — strawberry and lemongrass, watermelon and basil, mango and jalapeño, pineapple and mint, coconut and pandan and grapefruit and thyme — for $18 (or $24 for a jumbo size).

    And on weekends, things get even more festive with bottomless tacos and margaritas on offer for just $60 per person. Available across two two-hour sessions, this package includes as many tacos as you can handle — think fried fish and mango salsa, barbecoa pork, fried avocado and wagyu chipotle steak — and limitless frozen margs to wash them down.     Archie Rose Summer Cocktail Garden

    Last year, the legends from local distillery Archie Rose teamed up with York Street’s The Rook for a series of garden-style soirees. And now, they’re back — and they’re sticking around until the end of January.

    Just like last year, you can expect this sky-high gin-fuelled takeover to have a retro feel with 80s outdoor furniture. But this time around, you have the opportunity to taste from Archie Rose’s full lineup of spirits across a number of cocktails. Created by Archie Rose Creative Drinks Manager Rachelle Hair, the menu also features the two limited-edition gins that pay tribute to the Sydney Opera House: the salty and sweet Outside Gin, which has been paired with mango, lime, caramel, olive brine and violet tonic, and the fruity and summery Inside Gin, served with rum, rosemary syrup and lemon.

    Plus, there’s a new bar snack menu on offer to enjoy with your tipple. You’ll find everything from cajun shrimp stuffed zucchini flowers and grilled scallops with wakame butter to decadent lobster rolls on offer.
