This Just In: Jamie Valmorbida's Next Venture, Delmonte, is Set to Open in a Historic Carlton Corner Site this Winter, and it's got Italian Wine at its Heart

After much anticipation, the second phase of the renewed King & Godfree precinct has just been announced. This winter, Carlton will welcome Delmonte — a new Italian diner that blends approachability with authenticity — to the corner of Lygon and Faraday Streets.
Delmonte, the latest venture from hospo entrepreneur Jamie Valmorbida, will sit alongside Garfield Pizzeria, Johnny's Green Room and Pidapipo, marking the continued evolution of the historic site. The neighbourhood restaurant and wine room will be grounded in Italian traditions, presented through a contemporary lens.

Delmonte, meaning 'from the mountains', pays homage to Valmorbida's grandfather, Carlo, who was born in Italy's mountainous Veneto region, and reflects the venue's connection to heritage. The new venue will pay respect to the foundations of the original deli and wine shop that stood in its place, building on traditions centred on cured meats, cheeses, bread and wine.
Head Chef Diana Deseni (of Saint George, Pt. Leo Estate and Julie), alongside Executive Chef Mark Glenn, and under the watchful eye of Culinary Director Karen Martini, will present food that is simple, seasonal and fuss-free. Dishes will be grounded in the traditions of a classic Italian osteria while retaining the flexibility to adopt a modern interpretation. A wood oven and grill at the heart of the kitchen will steer the menu, as will produce from local establishment Donati's Fine Meats, which was recently acquired by Valmorbida.

Italian wine will be a central focus of Delmonte, with George McCullough of GUM Wine, Carnation Canteen, and Garfield Pizzeria, curating a wine program that spans both classic and emerging producers. The list will showcase drops from the Piedmont region, and will be complemented by select releases from the King & Godfree cellar. "Delmonte anchors the King & Godfree building. It's about bringing the corner back to what it has always been — a place for people to come together over wine and food," says Valmorbida.
