Overview

It's been the year of omakase for Sydney. From the picturesque Bay Nine in The Rocks to tiny 12-seat Besuto, and not one — but two chef's table-style menus from hospitality darling Chase Kojima (one at Sokyo and a special ramen omakase in Kojima's own Chatswood restaurant), the luxuriously indulgent and precisely-prepared multi-course experiences have well and truly entered the mainstream.

Joining the suite of Japanese restaurants offering omakase in Sydney is TOKO, set to arrive on George Street in the CBD in late September. Some of the finer details are still under the wraps, but we can confirm that the Surry Hills stalwart, which closed back in April after 15 years of trade on Crown Street, will reopen under owner Matt Yazbek and Head Chef Sunil Shrestha.

Architect Matt Darwon, who designed the original TOKO, is set to take the reins in the brand new 330-square-metre venue. Menu favourites from the original venue will be making their way over, but make no mistake — this iteration of TOKO doesn't shy away from learning new tricks.

Along with seating for 100 diners, the venue will boast a robata grill, omakase sushi bar and 16-person private dining room for special occasions. A late-night dining menu catering to patrons wandering in past 10pm is also promised, which will pair wonderfully with TOKO's expanded selection of sake and Japanese whisky, curated by Venue Manager Paul Birtwistle.

TOKO is set to open at the end of September this year at 275 George Street, CBD. We'll keep you updated on the details as they drop in the coming weeks.
